Craving comfort food coming into winter? I made this quick and easy apple crumble that is gluten free and dairy free with ingredients that I had in the pantry! Read through to the end to see the macronutrient break down

Makes 4

3 small organic apples (or 2 big ones) Cored and chopped into small cubes

2 Tbsp Orange juice (pick one that doesn’t have added sugar)

1-2 tbsp Water

40mL Organic Almond milk- unsweetened

1/2 tsp Cinnamon

2 Tbsp Pure Maple Syrup

40g Almond Meal

15g Desiccated Coconut

12g Rapadura Sugar or Coconut Sugar (or brown sugar)

more Cinnamon

1 Tbsp Maple Syrup

Pre heat oven to 180 degrees C fan forced

Start by heating the apple, cinnamon and liquids in a saucepan. Stir well and occasionally to cook evenly as not all apple was covered by liquid. Cook apple on medium heat until soft. Start making the crumble while apple is cooking.

In a bowl mix all dry ingredients, and with a fork stir the mixture as you slowly add the maple syrup in little amounts. This makes the dry mixture form little clumps or the crumble!

Take the apple off the heat and portion into 4 ramekins, pour remaining liquid on top of the apple. Cover apple evenly with the crumble and optional dust with cinnamon before putting into the oven.

Bake until crumble is lightly brown about 20 minutes.
